Ingredients
- 1.3 lblamb shoulder, cubed
- 4 wholewholemeal pita breads
- 4 tbsplemon juice
- 2 tbspolive oil
- 2 tspdried oregano
- 3 wholegarlic cloves, minced
- 5.3 ozGreek yoghurt (tzatziki base)
- 3.5 ozcucumber, grated
- 2 wholetomato, sliced
- 1 to tastesalt and pepper
Instructions
- Marinate lamb in lemon juice, olive oil, oregano, garlic, salt and pepper for at least 30 min.
- Thread onto skewers; grill over high heat 10โ12 min, turning regularly.
- Make tzatziki: squeeze moisture from cucumber, mix with yoghurt, minced garlic, salt.
- Warm pitas on grill. Fill with lamb, tomato, and tzatziki.
