  • kaffir lime leaves
  • red chilli
  • fish sauce
  • lime juice
  • fresh coriander

Ingredients

  • 200 g barramundi fillet
  • 1 sheet banana leaf
  • 1 whole lemongrass stalk
  • 3 whole kaffir lime leaves
  • 1 whole red chilli
  • 10 ml fish sauce
  • 15 ml lime juice
  • 10 g fresh coriander

Instructions

  1. Bruise lemongrass; thinly slice chilli.
  2. Place banana leaf on work surface; lay barramundi on leaf.
  3. Top with lemongrass, kaffir lime, chilli, fish sauce, and lime.
  4. Fold leaf to enclose; secure with toothpick.
  5. Steam for 12–15 min.
  6. Open at table; garnish with coriander.
