Ingredients

  • 10⅝ ozpasta dough
  • 8.8 ozricotta
  • 7⅛ ozfrozen spinach thawed squeezed
  • 2⅛ ozgrated parmesan
  • 1 wholeegg
  • 1⅔ cuptomato passata
  • 1 tbspolive oil

Instructions

  1. Mix ricotta, spinach, parmesan, egg, salt; set filling aside.
  2. Roll dough thin; cut circles 8 cm diameter.
  3. Fill and seal into sorrentinos; rest on floured tray.
  4. Boil in salted water 3–4 min.
  5. Simmer passata with olive oil; toss pasta.
  6. Serve with extra parmesan.
