  • fresh dill
  • fresh parsley
  • lemon juice
  • olive oil
  • garlic clove
  • sea salt
  • black pepper

  • 220 g Patagonian rainbow trout fillet
  • 5 g fresh dill
  • 5 g fresh parsley
  • 20 ml lemon juice
  • 25 ml olive oil
  • 1 whole garlic clove
  • 2 g sea salt
  • 1 g black pepper

Instructions

  1. Blend herbs, lemon juice, and olive oil for herb oil.
  2. Season trout with salt and pepper.
  3. Pan-sear skin-side down in hot oil 4 min.
  4. Flip; cook 2 min.
  5. Rest 2 min; drizzle herb oil generously.
  6. Serve with roasted vegetables or salad.
