- lemon
- coarse salt
- black pepper
- olive oil
- chimichurri
Ingredients
- 300 g veal sweetbreads
- 2 whole lemon
- 3 g coarse salt
- 2 g black pepper
- 15 ml olive oil
- 50 ml chimichurri
Instructions
- Soak sweetbreads in cold water 2 hours; blanch 5 min; peel membrane.
- Season with salt, pepper, and olive oil.
- Grill on medium heat 15–20 min turning until crispy on all sides.
- Squeeze lemon over them.
- Serve with chimichurri.
