Ingredients

  • 7.1 ozbeef tenderloin steak
  • 1.1 ozbutter
  • 3 wholegarlic cloves
  • 3 tbspwhite wine
  • 3 gfresh thyme
  • 2 tspolive oil
  • 2 gsea salt
  • 1 gblack pepper

Instructions

  1. Bring steak to room temperature; season with salt and pepper.
  2. Sear in olive oil over very high heat 2 min per side.
  3. Reduce heat; add butter, garlic, and thyme.
  4. Baste with foaming butter 2 min.
  5. Deglaze with white wine; spoon sauce over steak.
  6. Rest 5 min before serving.
