Ingredients

  • 1 lbred kidney beans, dried (soaked overnight)
  • 0.8 lbandouille sausage, sliced
  • 1 wholeonion, diced (the holy trinity)
  • 3 wholecelery stalks, diced
  • 1 wholegreen bell pepper, diced
  • 4 wholegarlic cloves, minced
  • 6 cupschicken stock
  • 2 tspCajun seasoning
  • 3 wholebay leaves
  • 3 cupscooked white rice (to serve)

Instructions

  1. Brown sausage in large pot; set aside. Sautรฉ onion, celery, pepper until soft.
  2. Add garlic, Cajun seasoning; cook 1 min.
  3. Add drained beans, stock, bay leaves, and sausage. Bring to boil.
  4. Simmer uncovered 75 min until beans are tender. Mash some beans against pot for creaminess.
  5. Remove bay leaves; serve over white rice with hot sauce.
