  • lean turkey mince
  • eggs
  • baby spinach
  • Cheddar cheese
  • red pepper
  • spring onions
  • garlic powder
  • smoked paprika
  • salt and pepper
  • olive oil spray

Ingredients

  • 250 g lean turkey mince
  • 4 whole eggs
  • 60 g baby spinach
  • 60 g Cheddar cheese
  • 0.5 piece red pepper
  • 3 stalks spring onions
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • to taste salt and pepper
  • few sprays olive oil spray

Instructions

  1. Preheat oven 180°C. Spray a 6-hole muffin tin with oil.
  2. Brown turkey mince in a pan, season with garlic, paprika, salt. Cool slightly.
  3. Whisk eggs. Mix in turkey, chopped spinach, diced pepper, spring onions and half the cheese.
  4. Divide into muffin holes. Top with remaining cheese.
  5. Bake 18–20 minutes until set and golden. Cool 5 minutes before removing.
