- lean turkey mince
- eggs
- baby spinach
- Cheddar cheese
- red pepper
- spring onions
- garlic powder
- smoked paprika
- salt and pepper
- olive oil spray
Ingredients
- 250 g lean turkey mince
- 4 whole eggs
- 60 g baby spinach
- 60 g Cheddar cheese
- 0.5 piece red pepper
- 3 stalks spring onions
- 0.5 tsp garlic powder
- 0.5 tsp smoked paprika
- to taste salt and pepper
- few sprays olive oil spray
Instructions
- Preheat oven 180°C. Spray a 6-hole muffin tin with oil.
- Brown turkey mince in a pan, season with garlic, paprika, salt. Cool slightly.
- Whisk eggs. Mix in turkey, chopped spinach, diced pepper, spring onions and half the cheese.
- Divide into muffin holes. Top with remaining cheese.
- Bake 18–20 minutes until set and golden. Cool 5 minutes before removing.
