  • beef brisket
  • lard
  • garlic
  • bay leaves
  • cumin
  • salt
  • corn tortillas
  • white onion
  • cilantro
  • green salsa

Ingredients

  • 1000 g beef brisket
  • 100 g lard
  • 6 cloves garlic
  • 3 units bay leaves
  • 3 g cumin
  • 12 g salt
  • 16 units corn tortillas
  • 100 g white onion
  • 20 g cilantro
  • 150 ml green salsa

Instructions

  1. Slice brisket into flat pieces, season with salt and cumin.
  2. Melt lard in wide heavy pan, add brisket, garlic and bay.
  3. Cook uncovered on low heat 1.5 hours until fat renders.
  4. Increase heat and fry suadero until golden and slightly crispy.
  5. Chop into small pieces.
  6. Serve in warm double-corn tortillas with diced onion, cilantro and green salsa.
