Ingredients

  • 1.8 lbhake fillets (or similar white fish)
  • 4 clovesgarlic cloves, minced
  • 2 wholelemon, juice and zest
  • 20 gfresh flat-leaf parsley, chopped
  • 10 gfresh oregano (or 1 tsp dried)
  • 1 tbspolive oil
  • 7.1 ozcherry tomatoes
  • 1 to tastesalt and black pepper

Instructions

  1. Preheat oven to 200°C. Line a baking dish with parchment.
  2. Whisk together olive oil, garlic, lemon juice and zest, parsley, oregano, salt, and pepper.
  3. Place fish fillets in the baking dish. Pour herb mixture over the fish; add cherry tomatoes around them.
  4. Bake 15–18 min until fish is opaque and flakes easily.
  5. Serve with a green salad or roasted vegetables.
