Ingredients
- 1.8 lbchicken thighs, boneless skinless
- 3 wholechipotle chillies in adobo (with sauce)
- 2 wholeancho chilli, toasted and soaked
- 4 wholegarlic cloves
- 2 tbspapple cider vinegar
- 1 tspcumin
- 1 tspdried oregano
- 0.6 cupchicken stock
- 1 to tastesalt
Instructions
- Blend chipotles, ancho chillies, garlic, vinegar, cumin, oregano, and stock into adobo sauce.
- Marinate chicken in sauce at least 1 hour.
- Heat pan; brown chicken 3 min per side. Add remaining marinade.
- Simmer covered 25โ30 min until cooked through and sauce thickens.
- Shred if desired; serve with rice, beans, or in warm tortillas.
