Ingredients
- 800 g chicken thighs
- 4 units mulato chiles
- 3 units ancho chiles
- 2 units pasilla chiles
- 50 g dark chocolate
- 300 g tomatoes
- 30 g sesame seeds
- 30 g pumpkin seeds
- 5 cloves garlic
- 500 ml chicken broth
- 3 g cinnamon
- 3 g cumin
- 1 unit plantain
Instructions
- Toast and soak dried chiles in hot water 20 min.
- Fry tomatoes, garlic, plantain, sesame and pumpkin seeds.
- Blend chiles with tomato mixture, spices and broth until smooth.
- Cook sauce in oil 10 min, add chocolate and simmer 20 min.
- Season and poach chicken thighs in mole sauce 25 min.
- Serve over rice garnished with sesame seeds.
