Ingredients

  • whole red snapper or sea bass
  • achiote paste
  • sour orange juice
  • garlic
  • x'catic or banana chile
  • white onion
  • tomatoes
  • banana leaves
  • cumin
  • black pepper

Ingredients

  • 1200 g whole red snapper or sea bass
  • 60 g achiote paste
  • 120 ml sour orange juice
  • 6 cloves garlic
  • 4 units x'catic or banana chile
  • 200 g white onion
  • 300 g tomatoes
  • 4 units banana leaves
  • 3 g cumin
  • 3 g black pepper

Instructions

  1. Score fish on both sides, blend achiote with orange juice, garlic, cumin and pepper.
  2. Rub fish inside and out with achiote marinade. Rest 30 min.
  3. Layer banana leaves, add sliced onion, tomato and chiles.
  4. Place fish on vegetables, wrap tightly in banana leaves.
  5. Grill over medium heat 25 min, turning once.
  6. Serve unwrapped at the table with tortillas and lime.
