  • pumpkin seeds (pepitas)
  • peanuts, unsalted
  • guajillo chiles
  • ancho chile
  • tomatoes
  • garlic
  • onion
  • cumin
  • chicken broth
  • vegetable oil

Ingredients

  • 900 g chicken pieces
  • 120 g pumpkin seeds (pepitas)
  • 80 g peanuts, unsalted
  • 5 units guajillo chiles
  • 2 units ancho chile
  • 300 g tomatoes
  • 4 cloves garlic
  • 150 g onion
  • 3 g cumin
  • 500 ml chicken broth
  • 30 ml vegetable oil

Instructions

  1. Toast pepitas and peanuts in dry pan until golden.
  2. Toast and soak chiles, blend with tomatoes, garlic and onion.
  3. Blend roasted seeds and nuts with some broth until smooth.
  4. Combine both blended mixtures.
  5. Fry sauce in oil until thickened.
  6. Brown chicken, pour pipián sauce over.
  7. Simmer 25 min until chicken is cooked through.
  8. Serve with white rice.
