Loaded Taco Meal Prep Bowls

Ingredients
- 2 lblean ground beef (or turkey)
- 2 tbsptaco seasoning
- 2.5 cupwhite rice, cooked
- 0.3 cupfresh cilantro, chopped
- 2 tbsplime juice
- 1 canblack beans, drained
- 1 cupfrozen corn, thawed
- 1 cuppico de gallo
- 5 tbspGreek yogurt or sour cream
- 0.5 cupshredded Mexican cheese blend
Ingredients
- 2 lb lean ground beef (or turkey)
- 2 tbsp taco seasoning
- 2.5 cup white rice, cooked
- 0.25 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 can black beans, drained
- 1 cup frozen corn, thawed
- 1 cup pico de gallo
- 5 tbsp Greek yogurt or sour cream
- 0.5 cup shredded Mexican cheese blend
Instructions
- Brown ground meat in a skillet over medium-high heat. Drain fat.
- Add taco seasoning and 2 tbsp water. Stir and simmer 2–3 min.
- Mix cooked rice with cilantro and lime juice for cilantro rice.
- Warm black beans and corn together.
- Portion into 5 containers: cilantro rice, taco meat, beans, corn, pico.
- Top with cheese and a dollop of Greek yogurt.
