Ingredients
- 7.1 ozspaghetti or tonnarelli
- 2.1 ozPecorino Romano, finely grated
- 3 wholeegg whites
- 2.8 ozcottage cheese (blended smooth)
- 2 tspcoarsely cracked black pepper
- 4 tbsppasta cooking water
- 1 to tastesalt
Instructions
- Cook pasta in well-salted boiling water; reserve 60ml cooking water.
- Toast pepper in dry pan 1 min. Add 30ml pasta water to bloom.
- Mix Pecorino, blended cottage cheese, and egg whites in a bowl.
- Add hot pasta to pan; remove from heat. Add cheese mixture and pasta water.
- Toss vigorously until creamy. Serve immediately with extra Pecorino.
