Ingredients
- 14.1 ozcooked risotto rice or leftover rice
- 7.1 ozlean beef mince
- 7 tbsptomato passata
- 2.8 ozlow-fat mozzarella, cubed
- 1 wholeegg, beaten
- 1.1 ozParmigiano, grated
- 2.8 ozbreadcrumbs
- 0.5 wholeonion, finely diced
- 1 to tastesalt and pepper
Instructions
- Cook mince with onion and passata 10 min; season; cool.
- Mix rice with Parmigiano and egg; season.
- Take a handful of rice, flatten, place a cube of mozzarella and spoon of ragù in centre.
- Close into a ball; coat in breadcrumbs.
- Bake at 200°C for 20–25 min until golden and crisp.
