Ingredients

  • 1.3 lblarge prawns, peeled and deveined
  • 2.1 ozchickpea flour (besan)
  • 1.1 ozrice flour
  • 8 gred chilli powder
  • 20 ggarlic and ginger paste
  • 3 gajwain (carom seeds)
  • 2 gturmeric powder
  • 1 tbsplemon juice
  • 4 tbspoil for shallow-frying
  • 1 to tastesalt
  • 1 to tastelemon wedges and green chutney, to serve

Instructions

  1. Mix chickpea flour, rice flour, chilli powder, turmeric, ajwain, garlic-ginger paste, lemon juice, and salt with a little water to form a thick batter.
  2. Coat prawns in the batter.
  3. Heat oil in a wide non-stick pan over medium-high. Shallow-fry prawns in batches, 2โ€“3 min per side until crispy and golden.
  4. Drain on kitchen paper. Serve immediately with lemon wedges and green chutney.
