Ingredients
- 2.6 lbbone-in mutton (or lamb), cut into pieces
- 3 wholeonions, finely sliced
- 5.3 ozlow-fat yogurt
- 1.1 ozgarlic and ginger paste
- 15 gKashmiri red chilli powder
- 10 gwhole spices: cloves, cardamoms, cinnamon, bay leaves
- 5 gfennel powder
- 3 gdried ginger powder (sonth)
- 2 tbspoil
- 1 to tastesalt
Instructions
- Heat oil; fry whole spices 30 sec. Add onions and cook 15–18 min until deeply golden brown.
- Add garlic-ginger paste; cook 3 min. Add Kashmiri chilli, fennel, and ginger powder; cook 2 min.
- Add mutton pieces; sear on high heat 5 min until browned.
- Beat yogurt and add gradually, stirring to prevent curdling.
- Add 200 ml water; cover and cook on low heat 60–70 min, stirring occasionally, until mutton is tender.
- Serve with steamed rice or naan.
