- whole urad dal, soaked 4 hours
- ginger, grated
- green chilies, minced
- curry leaves, chopped
- cumin seeds
- peppercorns, coarsely crushed
- oil for deep frying
- salt

- 1 cup whole urad dal, soaked 4 hours
- 1 tsp ginger, grated
- 2 whole green chilies, minced
- 8 leaves curry leaves, chopped
- 0.5 tsp cumin seeds
- 0.5 tsp peppercorns, coarsely crushed
- 2 cups oil for deep frying
- 1 tsp salt
Instructions
- Drain soaked urad dal and grind to a thick, fluffy batter using minimal water.
- Add ginger, green chili, curry leaves, cumin, pepper, and salt; mix well.
- Heat oil to 175°C in a deep pan.
- Wet your hands; take a ball of batter and poke a hole in the center; slide into oil.
- Fry 3–4 minutes per side until deep golden and crisp.
- Drain on paper; serve hot with sambar and coconut chutney.
