  • coriander powder
  • garam masala

  • 1 medium head cauliflower, cut into florets
  • 2 medium potatoes, cubed
  • 1 medium onion, diced
  • 2 medium tomatoes, diced
  • 1 tsp cumin seeds
  • 1 tbsp garlic-ginger paste
  • 0.5 tsp turmeric
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • 3 tbsp oil
  • 1 tsp salt

Instructions

  1. Heat oil in a wide pan; add cumin seeds and let sizzle.
  2. Add onion; sauté until golden, 5 minutes. Add garlic-ginger paste and cook 1 minute.
  3. Add tomatoes, turmeric, coriander powder, and salt; cook until soft, 5 minutes.
  4. Add cauliflower and potato; toss well to coat in masala.
  5. Cover and cook on medium-low heat 15 minutes, stirring occasionally, until vegetables are tender.
  6. Sprinkle garam masala; toss and serve with roti or paratha.
