Ingredients
- 8 ozelbow macaroni or chickpea pasta
- 1 cupcottage cheese (low-fat)
- 1.5 cupsharp cheddar, shredded
- 0.5 cupmilk (1%)
- 1 tspDijon mustard
- 0.5 tspgarlic powder
- 0.3 tspsmoked paprika
- 0.5 tspsalt
- 0.3 tspblack pepper
Ingredients
- 8 oz elbow macaroni or chickpea pasta
- 1 cup cottage cheese (low-fat)
- 1.5 cup sharp cheddar, shredded
- 0.5 cup milk (1%)
- 1 tsp Dijon mustard
- 0.5 tsp garlic powder
- 0.25 tsp smoked paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
Instructions
- Cook pasta per package directions. Reserve ¼ cup pasta water before draining.
- Blend cottage cheese, milk, Dijon, garlic powder, paprika, salt, and pepper until smooth.
- Return pasta to pot over low heat. Add cottage cheese blend.
- Stir in shredded cheddar gradually until melted and creamy.
- Add reserved pasta water if needed for desired consistency.
- Serve immediately.
