- 1.5 lbground beef (80/20)
- 8 wholesharp cheddar cheese slices
- 8 wholebutter lettuce leaves
- 2 wholetomato, sliced
- 1 wholeonion, thin-sliced
- 3 tbspmayonnaise
- 1 tspDijon mustard
- 1 tbspketchup (low-sugar)
- 0.5 tspsmoked paprika
- 1 tspsalt and pepper

- 1.5 lb ground beef (80/20)
- 8 whole sharp cheddar cheese slices
- 8 whole butter lettuce leaves
- 2 whole tomato, sliced
- 1 whole onion, thin-sliced
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp ketchup (low-sugar)
- 0.5 tsp smoked paprika
- 1 tsp salt and pepper
Instructions
- Divide beef into 8 equal balls (3 oz each). Season with salt, pepper, and smoked paprika.
- Heat a cast-iron skillet over high heat until smoking.
- Place beef balls in skillet two at a time and smash flat with a spatula. Cook 2 min per side.
- Add cheddar to each patty in last 30 seconds, cover briefly to melt.
- Mix mayo, Dijon, and ketchup for special sauce.
- Layer two patties in butter lettuce cups with tomato, onion, and sauce.
