Ingredients

  • 14.1 ozlean corned beef (from can), flaked
  • 1.3 lbfloury potatoes, boiled and mashed
  • 7.1 ozcooked beetroot, grated
  • 1 wholeonion, finely diced
  • 4 wholeeggs
  • 2.8 ozpickled gherkins, sliced
  • 2.1 ozlow-fat sour cream or quark
  • 10 gDijon mustard
  • 1 tbspoil
  • 1 to tastesalt and black pepper

Instructions

  1. Heat oil in a large non-stick pan; cook onion 5 min until golden.
  2. Add corned beef; cook 3 min, breaking up. Fold in mashed potato and grated beetroot; cook 5–8 min, pressing into a hash and letting it crisp on the bottom.
  3. Mix quark with mustard; season.
  4. In a separate pan, fry eggs to your liking.
  5. Divide hash between plates. Top each with a fried egg, gherkin slices, and a spoon of quark-mustard sauce.
