Ingredients
- 14.1 ozlean corned beef (from can), flaked
- 1.3 lbfloury potatoes, boiled and mashed
- 7.1 ozcooked beetroot, grated
- 1 wholeonion, finely diced
- 4 wholeeggs
- 2.8 ozpickled gherkins, sliced
- 2.1 ozlow-fat sour cream or quark
- 10 gDijon mustard
- 1 tbspoil
- 1 to tastesalt and black pepper
Instructions
- Heat oil in a large non-stick pan; cook onion 5 min until golden.
- Add corned beef; cook 3 min, breaking up. Fold in mashed potato and grated beetroot; cook 5–8 min, pressing into a hash and letting it crisp on the bottom.
- Mix quark with mustard; season.
- In a separate pan, fry eggs to your liking.
- Divide hash between plates. Top each with a fried egg, gherkin slices, and a spoon of quark-mustard sauce.
