Ingredients
- 14.1 ozlean Blutwurst (blood sausage) or black pudding, sliced
- 1.3 lbfloury potatoes, peeled and cubed
- 10.6 ozcooking apples, peeled and chopped
- 2 wholeonions, thinly sliced
- 5 tbsplow-fat milk
- 1 tbspapple cider vinegar
- 1 tbspoil
- 1 to tastesalt and black pepper
Instructions
- Boil potatoes and apples together until tender, ~18 min. Drain; mash with milk, vinegar, salt, and pepper.
- Heat half the oil in a non-stick pan; fry onion rings over medium-low heat 15–20 min, stirring, until caramelised and golden. Set aside.
- In the same pan with remaining oil, fry blood sausage slices over medium-high heat, ~2 min per side until crispy.
- Serve Himmel und Erde (mash) topped with sausage and caramelised onions.
