Ingredients

  • 14.1 ozlean Blutwurst (blood sausage) or black pudding, sliced
  • 1.3 lbfloury potatoes, peeled and cubed
  • 10.6 ozcooking apples, peeled and chopped
  • 2 wholeonions, thinly sliced
  • 5 tbsplow-fat milk
  • 1 tbspapple cider vinegar
  • 1 tbspoil
  • 1 to tastesalt and black pepper

Instructions

  1. Boil potatoes and apples together until tender, ~18 min. Drain; mash with milk, vinegar, salt, and pepper.
  2. Heat half the oil in a non-stick pan; fry onion rings over medium-low heat 15–20 min, stirring, until caramelised and golden. Set aside.
  3. In the same pan with remaining oil, fry blood sausage slices over medium-high heat, ~2 min per side until crispy.
  4. Serve Himmel und Erde (mash) topped with sausage and caramelised onions.
