Ingredients
- 1.8 lbrainbow trout fillets
- 2.1 ozflaked almonds
- 20 gunsalted butter (light)
- 2 tbsplemon juice
- 5 glemon zest
- 15 gfresh flat-leaf parsley, chopped
- 1 tbspolive oil
- 1.1 ozplain flour
- 1 to tastesalt and white pepper
Instructions
- Season trout fillets; dust lightly in flour on the skin side only.
- Heat olive oil in a non-stick pan over medium-high. Cook fillets skin-side down 4โ5 min until crispy. Flip and cook 2 min. Remove to warm plates.
- Wipe pan; add butter over medium heat. When foamy, add almonds; cook stirring until golden, ~3 min.
- Add lemon juice and zest; swirl 30 seconds.
- Pour almond butter sauce over trout; garnish with parsley.
