Ingredients
- 1.3 lbToulouse sausages (or lean pork sausages)
- 12.3 ozgreen Puy lentils, rinsed
- 1 wholeonion, diced
- 2 wholecarrots, diced
- 2 wholecelery stalks, diced
- 3 clovesgarlic cloves, minced
- 3.8 cupchicken or vegetable stock (low sodium)
- 1.1 oztomato paste
- 20 gDijon mustard
- 4 sprigsfresh thyme
- 2 wholebay leaves
- 1 tbspolive oil
- 1 to tastesalt and black pepper
Instructions
- Heat oil in a large heavy pot. Brown sausages all over, ~5 min; remove and slice.
- Cook onion, carrot, and celery in the same pot 5 min. Add garlic, tomato paste, thyme, and bay leaves; cook 2 min.
- Add lentils and stock. Bring to boil; simmer covered 25 min.
- Add sliced sausages; cook uncovered 10 min until lentils are tender and sauce thickens.
- Stir in Dijon mustard. Season; remove bay and thyme. Serve with crusty bread.
