Ingredients
- 1.8 lbvenison shoulder, cubed
- 0.8 cupred wine (dry)
- 1.7 cupbeef stock
- 2 wholecarrot, diced
- 2 wholecelery stalks, diced
- 1 wholeonion, diced
- 6 wholejuniper berries, crushed
- 2 wholebay leaves
- 20 gtomato paste
- 1 tbspsunflower oil
- 1 to tastesalt and pepper
Instructions
- Brown venison in batches in hot oil; season with salt and pepper.
- Sautรฉ onion, carrot, celery in same pot until softened.
- Add tomato paste; stir 1 min. Add wine, stock, juniper, and bay leaves.
- Return venison; braise covered at 160ยฐC for 90 minโ2 hours until tender.
- Remove bay leaves; adjust seasoning. Serve with Spรคtzle or potato dumplings.
