  • linguiça sausage
  • onion
  • garlic cloves
  • tomatoes
  • olive oil
  • bay leaf
  • salt
  • black pepper
  • parsley

Ingredients

  • 400 g pinto beans (cooked)
  • 200 g linguiça sausage
  • 1 medium onion
  • 3 piece garlic cloves
  • 2 medium tomatoes
  • 15 ml olive oil
  • 1 piece bay leaf
  • 4 g salt
  • 3 g black pepper
  • 10 g parsley

Instructions

  1. Slice sausage into rounds and brown in olive oil over medium heat, 5 minutes. Remove.
  2. Sauté onion and garlic in the same pan until soft.
  3. Add tomatoes and cook 3 minutes. Add beans with their liquid and bay leaf.
  4. Return sausage to pan. Simmer 15 minutes until flavors meld.
  5. Season, garnish with parsley, and serve with rice.
