- 1⅓ lbwhole squid tubes cleaned
- 7⅛ ozsmall shrimp peeled
- 3½ ozonion finely diced
- 7⅛ oztomato diced
- 15 gfresh coriander
- ½ cupdry white wine
- 10⅝ ozcrushed tomatoes
- 2 tbspolive oil
- 1⅜ ozbreadcrumbs
- 3 wholegarlic cloves minced
Instructions
- Preheat oven to 180 °C.
- Sauté onion and garlic in half the oil; add shrimp and cook 2 minutes.
- Stir in tomato, coriander, and breadcrumbs; season and cool.
- Stuff each squid tube two-thirds full with the shrimp mixture; seal with a toothpick.
- Brown stuffed squid in remaining oil in an oven-proof pan.
- Add white wine and crushed tomatoes; bring to a simmer.
- Transfer to oven; bake 25 minutes until squid is tender. Serve with white rice.
