  • black pepper
  • garlic powder
  • olive oil
  • lime

  • 15 g coarse sea salt
  • 5 g black pepper
  • 5 g garlic powder
  • 20 ml olive oil
  • 1 piece lime

Instructions

  1. Score the fat cap of the picanha with a crosshatch pattern.
  2. Rub all sides generously with coarse salt, pepper, and garlic powder.
  3. Preheat grill to high heat. Brush with olive oil.
  4. Grill fat side down for 5 minutes, then flip and grill 4-6 minutes per side for medium.
  5. Rest for 10 minutes, slice against the grain, and serve with lime.
