A hearty Minas Gerais classic — pinto beans with toasted farofa, sausage, bacon, and eggs. Named after the tropeiro cattle drivers, this is budget Brazilian muscle food.

  • pinto beans (cooked)
  • cassava flour (farofa)
  • turkey bacon
  • linguiça sausage
  • eggs
  • onion
  • garlic cloves
  • kale
  • salt
  • olive oil

Ingredients

  • 300 g pinto beans (cooked)
  • 80 g cassava flour (farofa)
  • 100 g turkey bacon
  • 100 g linguiça sausage
  • 2 piece eggs
  • 1 medium onion
  • 2 piece garlic cloves
  • 50 g kale
  • 4 g salt
  • 15 ml olive oil

Instructions

  1. Fry bacon and sausage in olive oil until crispy. Remove and set aside.
  2. In the same pan, sauté onion and garlic until golden.
  3. Add beans and stir-fry for 3 minutes. Add cassava flour and toast, mixing constantly.
  4. Add kale and stir until wilted. Make two wells and crack in eggs.
  5. Fold in bacon and sausage. Season and serve immediately.
