Ingredients

  • 1.5 lblean lamb mince
  • 3 clovesgarlic cloves, minced
  • 5 gground cumin
  • 5 gground coriander
  • 3 gsmoked paprika
  • 7.1 ozbulgur wheat, cooked
  • 1.4 ozfresh flat-leaf parsley, finely chopped
  • 20 gfresh mint, finely chopped
  • 3 wholetomatoes, finely diced
  • 1 wholecucumber, finely diced
  • 2 tbsplemon juice
  • 2 tbspolive oil
  • 3.5 ozlow-fat tzatziki, to serve
  • 1 to tastesalt and black pepper

Instructions

  1. Mix lamb mince with garlic, cumin, coriander, paprika, salt, and pepper. Shape into 12 oval koftas around skewers.
  2. Grill on a hot BBQ or griddle pan 10โ€“12 min, turning regularly, until cooked through.
  3. Toss bulgur with parsley, mint, tomato, cucumber, lemon juice, olive oil, salt, and pepper for tabbouleh.
  4. Serve koftas over tabbouleh with tzatziki on the side.
