Ingredients
- 1.3 lblean beef mince (5% fat)
- 5.3 ozred lentils, rinsed
- 1.8 lbcanned crushed tomatoes
- 1 wholeonion, finely diced
- 1 wholecarrot, grated
- 1 wholecelery stalk, diced
- 4 clovesgarlic cloves, minced
- 1.3 cupbeef stock (low sodium)
- 1.1 oztomato paste
- 5 gdried Italian herbs
- 1 tbspolive oil
- 1 to tastesalt and black pepper
Instructions
- Heat oil in a large saucepan. Cook onion, carrot, and celery 5 min until soft. Add garlic; cook 1 min.
- Add beef mince; cook, breaking up, until browned, ~6 min. Drain excess fat.
- Stir in tomato paste, crushed tomatoes, lentils, stock, and herbs. Season.
- Simmer uncovered on low heat 25 min, stirring occasionally, until lentils are soft and sauce thick.
- Serve over pasta, zucchini noodles, or jacket potato.
