  • 60 g baby spinach
  • 60 g feta cheese
  • 30 g sun-dried tomatoes
  • 1 whole garlic clove
  • 15 ml olive oil
  • 2 g sea salt
  • 4 whole toothpicks or kitchen twine

Instructions

  1. Preheat oven to 190°C.
  2. Butterfly chicken; pound to even thickness.
  3. Sauté garlic and spinach until wilted; cool.
  4. Mix spinach with crumbled feta and chopped sun-dried tomatoes.
  5. Spread filling on chicken; roll up and secure with toothpicks.
  6. Sear in oven-safe pan 2 min per side; roast 20 min.
  7. Rest 5 min before slicing.
