  • bush tomatoes dried
  • brown onion
  • brown sugar
  • red wine vinegar
  • olive oil
  • sea salt
  • cracked pepper

Ingredients

  • 250 g grass-fed sirloin steak
  • 15 g bush tomatoes dried
  • 1 whole brown onion
  • 10 g brown sugar
  • 15 ml red wine vinegar
  • 15 ml olive oil
  • 2 g sea salt
  • 2 g cracked pepper

Instructions

  1. Rehydrate bush tomatoes in warm water 10 min; roughly chop.
  2. Caramelise onion in olive oil over low heat 20 min; add bush tomatoes, sugar, and vinegar; simmer 10 min.
  3. Season sirloin with salt and pepper.
  4. Grill on high 3–4 min per side for medium-rare.
  5. Rest 5 min; top with chutney.
