  • laksa paste
  • coconut milk
  • chicken stock
  • rice noodles
  • tofu puffs
  • bean sprouts
  • sambal oelek
  • fresh coriander
  • lime wedge

Ingredients

  • 200 g tiger prawns peeled
  • 40 g laksa paste
  • 400 ml coconut milk
  • 400 ml chicken stock
  • 80 g rice noodles
  • 60 g tofu puffs
  • 60 g bean sprouts
  • 10 g sambal oelek
  • 10 g fresh coriander
  • 2 whole lime wedge

Instructions

  1. Fry laksa paste in a large pot 2 min.
  2. Add coconut milk and stock; bring to simmer.
  3. Add tofu puffs; simmer 5 min.
  4. Add prawns; cook 3 min until pink.
  5. Soak noodles per packet instructions; divide in bowls.
  6. Ladle broth and prawns over noodles.
  7. Top with bean sprouts, coriander, sambal, and lime.
