Ingredients

  • 14.1 ozchicken breast, butterflied
  • 7.1 ozripe mango, diced
  • 1.4 ozmacadamia nuts, toasted
  • 3.5 ozmixed salad leaves
  • 2 tbsplime juice
  • 1 tbspolive oil
  • 1 wholered chilli, sliced
  • 10 gfresh coriander
  • 1 to tastesalt and pepper

Instructions

  1. Season chicken; grill over high heat 5–6 min per side until cooked through. Rest and slice.
  2. Whisk lime juice, olive oil, chilli, and a pinch of salt for dressing.
  3. Arrange salad leaves on plates. Top with mango, sliced chicken, and macadamias.
  4. Drizzle with dressing and scatter coriander.
