  • 200 g barramundi fillet
  • 1 whole mango
  • 0.5 whole red onion
  • 15 g coriander
  • 30 ml lime juice
  • 15 ml olive oil
  • 2 g sea salt
  • 1 g chilli flakes

Instructions

  1. Preheat grill to high heat.
  2. Brush barramundi with olive oil and season with salt and chilli flakes.
  3. Dice mango, red onion, coriander; toss with lime juice for salsa.
  4. Grill 3–4 min per side until cooked through.
  5. Serve topped with mango salsa.
