Ingredients

  • 1.3 lblamb shoulder, cubed
  • 4 wholewholemeal pita breads
  • 4 tbsplemon juice
  • 2 tbspolive oil
  • 2 tspdried oregano
  • 3 wholegarlic cloves, minced
  • 5.3 ozGreek yoghurt (tzatziki base)
  • 3.5 ozcucumber, grated
  • 2 wholetomato, sliced
  • 1 to tastesalt and pepper

Instructions

  1. Marinate lamb in lemon juice, olive oil, oregano, garlic, salt and pepper for at least 30 min.
  2. Thread onto skewers; grill over high heat 10โ€“12 min, turning regularly.
  3. Make tzatziki: squeeze moisture from cucumber, mix with yoghurt, minced garlic, salt.
  4. Warm pitas on grill. Fill with lamb, tomato, and tzatziki.
