Ingredients
- 4 wholeround zucchinis (zapallitos)
- 14.1 ozlean ground beef
- 1 wholeonion, finely diced
- 2 wholehard-boiled eggs, chopped
- 2.1 ozlow-fat mozzarella, shredded
- 1 wholetomato, diced
- 2 tspolive oil
- 1 to tastesalt, pepper, cumin
Instructions
- Halve zucchinis and scoop out pulp; chop pulp and set aside.
- Sauté onion in olive oil until soft. Add beef and cook through, seasoning with salt, pepper, and cumin.
- Add chopped zucchini pulp and tomato; cook 5 minutes.
- Remove from heat, fold in chopped eggs.
- Fill zucchini shells, top with mozzarella.
- Bake at 200°C for 20–25 minutes until cheese is golden.
