Ingredients

  • 14.1 ozrainbow trout fillets
  • 1.8 ozblanched almonds, roughly chopped
  • 1 tsplemon zest
  • 2 tbsplemon juice
  • 15 gflat-leaf parsley, chopped
  • 1 tbspolive oil
  • 1 to tastesalt and black pepper

Instructions

  1. Pat trout fillets dry. Season with salt and pepper.
  2. Toast almonds in a dry pan 2โ€“3 minutes until golden; set aside.
  3. Heat olive oil over medium-high. Cook trout skin-side down 4โ€“5 min until skin crisps.
  4. Flip and cook 2โ€“3 min more.
  5. Plate trout; scatter toasted almonds, lemon zest, parsley, and drizzle lemon juice.
