  • 10⅝ ozfine cornmeal (harina de maíz)
  • 7⅛ ozfresh cheese or ricotta
  • 7⅛ ozonion finely diced
  • 3 wholeeggs
  • 1 cupwhole milk
  • 4 tbsplard or vegetable oil
  • 5 gsalt

Instructions

  1. Preheat oven to 180 °C. Grease a 20×20 cm baking tin.
  2. Sauté onion in lard until golden; cool slightly.
  3. Whisk eggs, milk, and oil; stir in cornmeal to make a thick batter.
  4. Fold in sautéed onion and crumbled cheese.
  5. Pour into prepared tin; bake 40–45 minutes until golden and a skewer comes out clean.
  6. Cool 10 minutes before slicing; serve warm as a side or snack.
