- 10⅝ ozfine cornmeal (harina de maíz)
- 7⅛ ozfresh cheese or ricotta
- 7⅛ ozonion finely diced
- 3 wholeeggs
- 1 cupwhole milk
- 4 tbsplard or vegetable oil
- 5 gsalt
Instructions
- Preheat oven to 180 °C. Grease a 20×20 cm baking tin.
- Sauté onion in lard until golden; cool slightly.
- Whisk eggs, milk, and oil; stir in cornmeal to make a thick batter.
- Fold in sautéed onion and crumbled cheese.
- Pour into prepared tin; bake 40–45 minutes until golden and a skewer comes out clean.
- Cool 10 minutes before slicing; serve warm as a side or snack.
