- beef stock

- 200 g salmon fillet
- 120 ml Malbec wine
- 80 g cremini mushrooms
- 2 whole shallots
- 15 g butter
- 60 ml beef stock
- 15 ml olive oil
- 3 g fresh thyme
- 2 g sea salt
Instructions
- Pan-sear salmon skin-side down 4 min; flip 2 min; rest.
- Sauté shallots and mushrooms in butter 5 min.
- Add Malbec; reduce by half.
- Add stock; simmer 5 min.
- Finish with thyme and seasoning.
- Plate salmon; drizzle Malbec mushroom sauce.
