Ingredients
- 1 lbred kidney beans, dried (soaked overnight)
- 0.8 lbandouille sausage, sliced
- 1 wholeonion, diced (the holy trinity)
- 3 wholecelery stalks, diced
- 1 wholegreen bell pepper, diced
- 4 wholegarlic cloves, minced
- 6 cupschicken stock
- 2 tspCajun seasoning
- 3 wholebay leaves
- 3 cupscooked white rice (to serve)
Instructions
- Brown sausage in large pot; set aside. Sautรฉ onion, celery, pepper until soft.
- Add garlic, Cajun seasoning; cook 1 min.
- Add drained beans, stock, bay leaves, and sausage. Bring to boil.
- Simmer uncovered 75 min until beans are tender. Mash some beans against pot for creaminess.
- Remove bay leaves; serve over white rice with hot sauce.
