Ingredients

  • 2 lbschicken tenders or breast strips
  • 1 cupbuttermilk
  • 1 cupall-purpose flour
  • 2 tbspcayenne pepper
  • 1 tbspbrown sugar
  • 1 tspsmoked paprika
  • 1 tspgarlic powder
  • 0.3 cupneutral oil for shallow frying
  • 4 sliceswhite bread slices (to serve)
  • 8 slicesdill pickle slices
  • 1 to tastesalt and black pepper

Instructions

  1. Marinate chicken in buttermilk, salt, pepper for at least 30 min.
  2. Dredge in flour seasoned with salt, garlic powder, and half the cayenne.
  3. Shallow-fry in hot oil 4โ€“5 min per side until golden and cooked through.
  4. Mix remaining cayenne, brown sugar, paprika, and 2 tbsp hot frying oil into a paste.
  5. Brush chicken liberally with hot paste. Serve on white bread with pickles.
