Grilled Halloumi and Vegetable Platter

Golden grilled halloumi with roasted Mediterranean vegetables and lemon herb dressing. A satisfying meat-free high-protein British meal with 26g protein.

Ingredients

  • 250 ghalloumi
  • 1 largecourgette
  • 1 largered pepper
  • 1 mediumred onion
  • 150 gcherry tomatoes
  • 2 tbsplemon juice
  • 2 tbspolive oil
  • 1 tsppomegranate molasses
  • 1fresh mint
  • 1 tspza'atar

Ingredients

  • 250 g halloumi
  • 1 large courgette
  • 1 large red pepper
  • 1 medium red onion
  • 150 g cherry tomatoes
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp pomegranate molasses
  • small bunch fresh mint
  • 1 tsp za'atar

Instructions

  1. Slice halloumi 1cm thick. Chop courgette and pepper into strips, halve onion.
  2. Toss veg with 1 tbsp oil and za'atar. Grill or roast 200°C for 10 minutes.
  3. Grill halloumi in a hot dry pan 2 minutes each side until golden.
  4. Whisk lemon juice, remaining oil and pomegranate molasses.
  5. Arrange vegetables and halloumi. Drizzle dressing, scatter mint.
