Ingredients

  • 600 gchicken breast
  • 400 gsweet potato
  • 100 gspinach
  • 400 mlcoconut milk light
  • 200 gtinned tomatoes
  • 1 largeonion
  • 3 clovesgarlic
  • 2 cmginger
  • 2 tspgaram masala
  • 1 tspcumin seeds
  • 0.5 tspturmeric
  • 1 tbspolive oil

Ingredients

  • 600 g chicken breast
  • 400 g sweet potato
  • 100 g spinach
  • 400 ml coconut milk light
  • 200 g tinned tomatoes
  • 1 large onion
  • 3 cloves garlic
  • 2 cm ginger
  • 2 tsp garam masala
  • 1 tsp cumin seeds
  • 0.5 tsp turmeric
  • 1 tbsp olive oil

Instructions

  1. Cube chicken and sweet potato. Fry onion in oil 5 minutes.
  2. Add garlic, ginger and spices, cook 1 minute.
  3. Add chicken, brown lightly 3 minutes.
  4. Add sweet potato, tomatoes and coconut milk. Simmer 20 minutes.
  5. Stir in spinach, cook 2 minutes until wilted.
  6. Season and serve with rice or naan.
