Ingredients
- 600 gchicken breast
- 400 gsweet potato
- 100 gspinach
- 400 mlcoconut milk light
- 200 gtinned tomatoes
- 1 largeonion
- 3 clovesgarlic
- 2 cmginger
- 2 tspgaram masala
- 1 tspcumin seeds
- 0.5 tspturmeric
- 1 tbspolive oil
Ingredients
- 600 g chicken breast
- 400 g sweet potato
- 100 g spinach
- 400 ml coconut milk light
- 200 g tinned tomatoes
- 1 large onion
- 3 cloves garlic
- 2 cm ginger
- 2 tsp garam masala
- 1 tsp cumin seeds
- 0.5 tsp turmeric
- 1 tbsp olive oil
Instructions
- Cube chicken and sweet potato. Fry onion in oil 5 minutes.
- Add garlic, ginger and spices, cook 1 minute.
- Add chicken, brown lightly 3 minutes.
- Add sweet potato, tomatoes and coconut milk. Simmer 20 minutes.
- Stir in spinach, cook 2 minutes until wilted.
- Season and serve with rice or naan.
