Ingredients
- 1000 ghoneycomb tripe, cleaned
- 600 ghominy (maíz pozolero)
- 8 unitsguajillo chiles
- 3 unitsancho chiles
- 6 clovesgarlic
- 200 gonion
- 5 goregano
- 3 gcumin
- 4 unitslime
- 4 unitsdried chile de arbol
Ingredients
- 1000 g honeycomb tripe, cleaned
- 600 g hominy (maíz pozolero)
- 8 units guajillo chiles
- 3 units ancho chiles
- 6 cloves garlic
- 200 g onion
- 5 g oregano
- 3 g cumin
- 4 units lime
- 4 units dried chile de arbol
Instructions
- Rinse tripe thoroughly, cut into pieces.
- Boil tripe with onion, garlic and salt in fresh water 2 hours.
- Toast and soak guajillo, ancho and chile de arbol chiles, blend with garlic.
- Add strained chile sauce to tripe broth.
- Add hominy, simmer 30 min.
- Season with oregano, cumin and salt.
- Serve with lime, dried oregano, diced onion and tostadas.
