Ingredients

  • 800 gbeef chuck
  • 6 wholeguajillo chillies deseeded
  • 3 wholeancho chillies deseeded
  • 12 wholecorn tortillas
  • 300 gOaxacan cheese or mozzarella
  • 1 wholeonion
  • 6 wholegarlic cloves
  • 5 gcumin

Instructions

  1. Toast and soak chillies; blend with garlic, onion, cumin and 500ml water.
  2. Braise beef in chile broth 2.5h until tender; shred; reserve consommé.
  3. Dip tortillas in consommé; griddle on hot pan; add cheese and beef.
  4. Fold and fry until crispy. Serve with consommé for dipping.
