Ingredients
- 800 gbeef chuck
- 6 wholeguajillo chillies deseeded
- 3 wholeancho chillies deseeded
- 12 wholecorn tortillas
- 300 gOaxacan cheese or mozzarella
- 1 wholeonion
- 6 wholegarlic cloves
- 5 gcumin
Instructions
- Toast and soak chillies; blend with garlic, onion, cumin and 500ml water.
- Braise beef in chile broth 2.5h until tender; shred; reserve consommé.
- Dip tortillas in consommé; griddle on hot pan; add cheese and beef.
- Fold and fry until crispy. Serve with consommé for dipping.
